Pancakes aren’t just for breakfast

Pancakes are great, right? But you can’t have them too often because they take so much time to make and they can be a little fatty. Wrong! Here’s my two favourite pancakes recipes that are super easy to make, take very little time and aren’t really fatty at all. Pancakes aren’t just for breakfast, y’all.



Breakfast berry pancakes


Serves 4 – about 25 minutes prep + make

130g White Self Raising Flour

2 teaspoons of Canderel Granular Low Calorie Sweetener

150ml Unsweetened Soya Milk

1 teaspoons of Vanilla Extract

1 Egg

4 tablespoons of Fat Free Natural Fromage Frais

1 teaspoons of Honey

Blueberries and banana, as much as you like


Mix the flour, sweetener together in a bowl – you don’t need to sift the flour if you mix the flour with a balloon whisk and boy, does this save time and energy. Then combine the milk, vanilla extract and the egg yolk in another bowl and mix these together into a (rather thick) batter. Then take the egg while, and mix it with an electric mixer into soft peaks (this takes about 2 minutes tops). Fold the egg whites into the batter and voila – you have your fluffy pancake batter ready for frying. Spoon about 3 tablespoons on a non-stick pan at a time and fry on each side until they get a little colour. Note: these are fat little pancakes so don’t try to spread the batter too thin. Then just top with berries, banana, honey and Fromage Frais and off you go.



Pancakes with Smoked Salmon, Avocado and Rocket


Serves 4 – takes 25 minutes prep + make

110g Plain White Flour

1 pinch of Salt

1 egg

275ml Skimmed Milk

Calorie controlled cooking spray – as needed

200g Smoked salmon

1 Avocado, peeled, stoned and sliced

Handful of Rocket

4 tablespoons of Fat Free Natural Fromage Frais

Black pepper, freshly ground

1 Lemon, quartered, to serve

Dill, Fresh, chopped, to garnish


Do your thing with the flour and salt in a large jug or mixing bowl (don’t bother sifting – takes too long and whisking it quickly is just as effective). Add the egg and milk and beat with a balloon whisk to make a smooth batter. Heat a non-stick frying pan and spray with low fat cooking spray. Pour in a thin stream of batter, tilting the pan so that it flows evenly across the surface. Cook over a medium heat until the surface has set, then flip the pancake over to cook the other side. Make 4 pancakes in total, spraying the pan with low fat cooking spray before cooking each one. Keep the pancakes in a warm place until all of them are cooked. Top the pancakes with an equal amount of smoked salmon, avocado and rocket leaves. Add 1 tablespoon of fromage frais to each, sprinkle chopped fresh dill and ground black pepper over the top, then serve with lemon wedges. NOM.

    Yum! These look amazing! I love the tip about whisking right in the bowl, I do this too. It saves so much time (since in some recipes you don’t REALLY have to sift) and prevents you from having to wash extra dishes!
